Halloween Stuffed Peppers
Carving a pepper is easier than carving a big pumpkin! Simply cut off the top, scoop out the seeds, and then use a small knife to create the faces. You can stuff the peppers using our stuffed peppers recipe, your favorite veggie-quinoa blend, the recipe above, or make it even easier with Tommy’s Fiesta Quinoa straight out of the bag. Just carve, stuff, heat and eat!

Skip the soda and sugary beverages and make fruit and vegetable smoothies using frozen strawberries, bananas, orange juice, vanilla yogurt, honey and “dragon scales” (baby spinach). Make a blender-full in advance and serve when thirst strikes!

A Halloween party wouldn’t be complete without some “pumpkin puke”! Carefully carve your pumpkin making sure the mouth is wide enough to incorporate your favorite dip or dips. This black bean pumpkin soup can easily be created using ingredients you may already have in your pantry: black beans, canned pumpkin, tomatoes, onions, and vegetable broth. Be sure to make extra as it freezes well, and makes for a delicious, healthy lunch or dinner when you’re short on time.
Monster Sandwiches
Using a cookie cutter or an upside-down water glass, cut out circles from your favorite bread, layer with your favorite sandwich fixings (don’t forget the veggies!) Cut and arrange the cheese slices and lettuce to look like monster teeth and garnish with “monster eyes” made from green or black pitted olives held in place with toothpicks. This creative idea will be the perfect lunch box surprise on Halloween.
