Because avocado is so versatile – it goes with everything! – you can top it with just about anything, which means it’s perfect for people interested in plant-based or vegan meals.
Our Favorite Avocado Toast Toppings
We’re all about avocado toast here at Tommy’s and wanted to share four of our favorite, veggie-filled ways to top it. These recipes are #supertasty and so easy you’ll barely know you’re cooking! We like to enjoy them open-face, with a fork, but if you need breakfast or lunch on the go, they can easy be turned into a sandwich with extra avocado and a second piece of bread.

Tommy’s Super Greens Spicy Avocado Toast
This one is for those of you who like a kick! Spread toasted whole grain bread with avocado, then top with squash noodles (available in most grocery stores or or make your own with this recipe) and Tommy’s Super Greens (or Organic Super Greens). Garnish with sprouts for a crisp finish, and top with as much sriracha as your spice-loving heart desires.
Tommy’s Asparagus & Kale Avocado Toast
This avocado toast is especially versatile. Spread toasted whole grain bread with avocado, then top with zucchini ribbons, Tommy’s Asparagus & Kale, and crumbled goat cheese. Don’t have zucchini on hand? Leave it off – our Asparagus & Kale can stand on its own. Want a vegan version? Skip the goat cheese. Want an extra protein punch? Top it with an over-easy egg. No matter how you top it, this one is sure to please.
Tommy’s Cauliflower & Green Beans Avocado Toast
Cauliflower at breakfast? Yes, please!! Spread toasted whole grain bread with avocado, then top with pea shoots and Tommy’s Seasoned Cauliflower & Green Beans or Tommy’s Organic Cauliflower & Green Beans. Thin yogurt with lemon juice to make a bright and zesty dressing. One bite of this avocado toast and you’ll never relegate cauliflower and green beans to your dinner plate again.
Tommy’s Root Fusion Avocado Toast
Not only are root vegetables super tasty, but they’re really good for you too. Spread toasted whole grain bread with avocado, then top with arugula, Tommy’s Root Fusion (a delicious medley of carrots, sweet potatoes, beets, and apples), and mint yogurt dressing. Want more zing? Try using lemon yogurt dressing instead. Leave the dressing off completely for a vegan alternative

Love Super Greens, but not fond of sprouts? Add extra greens and skip the sprouts completely.
Want a vegan alternative to the Root Fusion avocado toast? Just leave off the yogurt mint dressing or swap it for your favorite vegan alternative and some fresh mint leaves.
