When you’re starting a healthy eating journey, having some supporters to help you can make all the difference. That’s why we started the #ThinkVeggiesFirst Challenge! With a community of others adding veggies to their meals, you can stay inspired to do it yourself. So we’ve gathered up some of our favorite photos from Instagram to show you just how to eat more vegetables, and how to do it with tasty ingredients!
Start With the Most Important Meal
If you want to jumpstart healthy eating habits, why not kick off your day with some vegetables?! Adding veggies to your breakfast can help provide you with energy all morning, and you won’t have to be stuck with coffee for breakfast. Here are some great ideas for the most important meal of the day.
Avocado Toast & Eggs
This breakfast from @Southerntngirl had us drooling! All you need to do is top your morning toast with some smashed avocado and an egg however you like it. You can follow her idea even further and add a side of salad, veggies, or fruit.
Tofu scramble is a great breakfast for anyone who wants to skip the eggs. You can add in all kinds of vegetables, eat it in a taco, or serve it with a bagel, like this plate from @Melmegan. You can find a recipe for tofu scramble here.

We all have those days when fast food restaurants look so much better than making good food. That’s why meal prepping can be a lifesaver when it comes to healthy eating. Whether it’s a whole meal for every day of the week or just ingredients you can throw together, you won’t regret having something on hand.
@Sweetmatcha has an awesome array of vegetables ready to use. These can come in handy to have washed and chopped when you want to quickly saute them or add them in with your favorite meals.
@Auntteen928 also has some great meals prepped! These bowls can be kept in the fridge and taken to school or the office for lunch, or frozen and saved for later.

Find Simple Meals
It may seem like adding vegetables to your usual meals isn’t an option, but that’s just not true! Even the simplest meals can be made just a little bit healthier with some veggies on top. Or even filling the whole bowl.
Roasted vegetables are so simple to make, and they can be added to just about any meal. All you need is your favorite veggies, some olive oil, and a little S&P. You can keep it simple with just one flavor, or add in a variety, like @Zsazsa1957. You can even add in your favorite protein for a one-sheet meal, like this one from Taste of Home.
This teriyaki chicken from@Xsweetblossomx is another example of tasty, healthy, easy. It’s also a perfect example of how you can add vegetables to your everyday meals.
This simple meal from @Owlhowl23 is full of veggies and plant-based power. Just start with a grain, like quinoa, mix in your favorite vegetables, and saute them on the stovetop. You could even use frozen veggies like ours and have dinner on the table in 10 minutes or less.
