Super Hoppin’ John

December 30, 2016 by 1 Comment

Super Hoppin' John

Hoppin’ John is a New Year’s Day tradition for southerners who believe eating black eyed peas will bring good fortune in the coming year.  Hoppin’ John is a simple stew that is often served with rice or cornbread, and with a side of collard greens.  Hoppin’ John is great for New Years day because it’s easy to prep and let simmer on the stove for a delicious meal after a late night celebrating.  Our classic recipe makes things even easier and tastier with the addition of Super Greens or Organic Super Greens – there’s no need to cook greens on the side!  Eat it like a soup, or serve with a slotted spoon over rice.  This is sure to be a delicious meal that will bring you good luck and a happy belly any time of the year.
