Hoppin’ John is a simple stew that is often served with rice or cornbread, and with a side of collard greens. Hoppin’ John is great for New Years day because it’s easy to prep and let simmer on the stove for a delicious meal after a late night celebrating. Our classic recipe makes things even easier and tastier with the addition of Super Greens or Organic Super Greens – there’s no need to cook greens on the side! Eat it like a soup, or serve with a slotted spoon over rice. This is sure to be a delicious meal that will bring you good luck and a happy belly any time of the year.
Super Hoppin’ John
Ingredients:
- 2 tbsp Olive Oil
- ½ cup Onion, chopped
- ½ cup Celery, chopped
- ½ cup Bell Pepper, chopped
- 1 tbsp Garlic, minced
- 1 bag Tommy’s Super Greens
- 1 lb Black Eyed Peas
- 6 cups Vegetable Stock
- 2 Bay Leafs
- 2 tsp Fresh Thyme, minced

Directions:
- Place a large pot over medium heat. Add the olive oil, celery, bell pepper, onion, and garlic and sweat until tender, about 7 minutes.
- Reduce heat to medium and pour in the stock. Add the black eyed peas, bay leaf, and fresh thyme.
- Simmer until the black eyed peas are fully softened, about 60 minutes. Add Tommy’s Super Greens and simmer for 10 additional minutes.
- Serve immediately over rice, or with freshly baked jalapeno cheddar cornbread. Enjoy!
