We can all agree that a classic grilled cheese is a tasty choice for lunch, so why not jazz it up a little?! Fiesta Quinoa with Butternut Squash Noodles
This Fiesta Quinoa lunch is sure to start a plant-based party that will keep you going all day long. Just prepare the Fiesta Quinoa (you can find our recommendation here), chop the heirloom tomatoes in half, and add it all to the plate on top of butternut squash ribbons.
